About the Event

The Mansfield Resilience Project is a tailored ONLINE program dedicated to making positive changes in our local community through a series of webinars focused on six key areas of wellbeing and resilience. The third of our seminars is focussed on Food and Nutrition and we are fortunate to have experienced educator Andy Kappes and accredited dietician Lucy Marks as our guest speakers.

Andy is a qualified and experienced educator in the food and nutrition field who has always had a passion for real and delicious food - especially sharing meals and good times!

Andy's background is in food studies, nutrition and health education in secondary, tertiary and community settings.

She has set up commercial kitchens to cater for large groups and meet their many dietary requirements, run international cookery classes and provided catering for events.

From an early age Andy has been passionate about food – planning, creating it, eating and above all, sharing meals and good times around a table!

It all started by completing a degree in home economics teaching and moving into the teaching world.  Since then she has spent 18 years educating young people about food and nutrition and instilling in them the joy of food and cooking.

In addition to her teaching degree, Andy has a Diploma in Nutrition and Food Coaching, a Cert 4 in Training and Assessment and a Cert 2 in Hospitality (Kitchen Ops).

Lucy holds a Bachelor’s degree in Nutrition and Dietetics (Honours) and is an Accredited Practising Dietitian with Dietitian’s Australia. Lucy works at the Primary Care Centre of Mansfield District Hospital as the sole dietitian, and has more recently also taken on the role of the Respond Project Coordinator.

Given her profession, Lucy is passionate about supporting people to thrive. In her dietetics practice, Lucy not only draws on a balanced, nutrient-dense intake to GET you well, but she also incorporates broader lifestyle strategies to KEEP you well, including; movement, sleep, stress management and nutrition supplementation if necessary.

Then in her Respond Project Coordinator role, she is able to influence the health of the community at more of a population level. Lucy currently oversees a number of initiatives under the Mansfield Respond Project banner, including but not limited to the Mansfield Fresh Food drive, The Mansfield Summer series that recently ran for the month of February, and our project- the Mansfield Resilience Project.

Lucy is here to support you in getting back to basics with the food that is landing on the end of your forks and to myth bust common food beliefs.
